Inside out omelet

This is kind of an inside out omelet. Sauteed spinach on the bottom, a veggie burger, sauteed zucchini & onion and topped with an egg, over easy. Served with avocado & pineapple.

Coconut curry soup

Coconut curry butternut squash & pear soup along with some waldorf salad (apples, celery, walnuts, cheddar cheese & raisins). The soup is SOOOO good. I will definitely make this again! 

Cooked butternut squash in chicken broth til soft. Blended with some light coconut milk, a pear and curry powder

Pasta salad

I'm gone for a few days but made a pasta primavera salad for Tim before I left this morning. I used whole wheat tri color pasta, tomatoes, parsley, yellow & green squash, green onions, olive tapenade, roasted red peppers and mozz cheese.

Mushy pea cakes

Mushy pea cakes from the leftover peas last night. 2nd time making them and liked these better. Practicing for my God Daughter's boyfriend who is British and loves these. We will have to see how mine fare! I crusted them with a 7 seed blend I had and topped with plain Greek yogurt.

Thanksgiving flavors a few days early

Cornish hen basted with fig jam, roasted cinnamon maple butternut squash and cran-orange wild rice with toasted pecans. Thanksgiving flavors a few days early!

Pumpkin pie fake out

Keeping with the Thanksgiving flavors tonight, pumpkin parfaits!  Crushed cinnamon graham crackers in the bottom (and sprinkled in top), lowfat pumpkin yogurt and lowfat cool whip sprinkled with some pumpkin pie spice.

Banana & peanut butter stuffed French toast

Peanut butter and banana stuffed French toast (whole wheat) topped with fresh maple syrup sent from a friend in VT! Served with turkey bacon. 

Mediterranean omelet

Omelet with artichokes, spinach, sun dried tomatoes, olives and feta cheese. Served with melon and fresh pineapple. 

Breakfast wrap

Egg white, turkey veggie burger, avocado, spinach and tomato on half of a whole wheat wrap. Served with pears and pomegranate seeds.

Caprese omelet

Used leftover salad from last night to make a caprese omelet with some extra basil in the eggs.

Blackened salmon salad

Yummy Yummy salad for lunch. Blackened a piece of salmon & added grape tomatoes, cucumber, feta cheese, pomegranate seeds & pepitas to spring mix. I dressed it with some plain greek yogurt that I mixed with a little olive tapenade and a little bit of milk.

Apple pancakes

Oatmeal & maple apple pancakes topped with brown sugar cinnamon apple craisin topping & walnuts. I boosted the protein in the pancakes by adding ricotta cheese! Served with bacon & fresh squeezed oj.

Spinach carbonara

We bought fresh pasta at the farmer's market last weekend and cooked one of flavors tonight. The dish is a twist on pasta carbonara. Spinach fettuccine with shredded pesto poached chicken breast, spinach and carbonara sauce. Two thumbs up...well, actually four since we both enjoyed it!

Leftovers with eggs


Used up a few leftovers from last night for breakfast this morning. Smashed up a piece of meatloaf, cooked the mashed potatoes into a patty and topped with eggs over easy. Added a little tomato too as a side.

Steak and eggs kicked up

Used my leftover steak for steak & eggs this morning. The eggs are scrambled with green onions, peppers, zucchini, spinach & parsley and stuffed in a portobello mushroom cap then topped with some goat cheese.
