Beef, it's what's for dinner! Tim grilled the steaks & I took care of the sides. Baby bellas, jalapeno corny bread and roasted asparagus. Estimating 12 points between the steak and cornbread.

German dinner

We had friends over tonight and all of us love German food so that was the theme. Starting from the top, homemade apple sauce, roasted brussel sprouts, corn, sauerkraut, pork roast & spaetzle with mushroom gravy. 

Chicken & broccoli pasta

Pan grilled chicken breast (non-stick, no oil) atop whole wheat pasta & broccoli, tossed with garlic, s&p. 8 pp with ww.

Egg white "pizza"

Egg white breakfast pizza (aka a frittata!) with onion, peppers & bruschetta Boca Burger. Topped with low fat mozz cheese & fresh basil & green onions.

Spinach & veggie salad

Baby spinach topped with all kinds of veggies! Radishes, corn, cucumbers, red onion, black olives, tomatoes and avocado. Also sprinkled in a little bit of feta cheese. 8 pp total...no dressing needed in my opinion since the avocado is so creamy! 

Meatless Monday omelet

Meatless Monday breakfast. Egg beaters with zucchini, red pepper, green onion & light mozz cheese. Served with a side of hash made from a chopped Boca Burger & diced canned potatoes. 5 pp for the whole meal

Clam Chowder

Dinner was by request from the man in the house & since it's Father's Day, of course I obliged. Homemade clam chowder. I added corn to my bowl.  It's made with part skim milk and part half-half vs cream & turned out just fine!  In addition to the milk, there's canned/diced potatoes, canned clams (not drained, 2 cans), 2 ribs of celery, 4 chopped & cooked green onions, thyme, s&p and bacon to finish.

Grilled teriyaki turkey burger


Grilled teriyaki turkey burger (with red onion, red pepper and cilantro) on top of grilled pineapple and spinach. Baked west potato and zucchini for sides. 8 pp total.

Turkey BLT on a whole wheat pocket (Tofuyan brand) and mixed berries. 5 pp for breakfast this am.

Trying to fight off a cold so decided that in addition to lots of fruit today, I made some garlic chicken noodle soup. Made enough for breakfast (yes, unconditional but medicinal!), 4 pp per bowl.

Whole wheat spaghetti with meat sauce

Whole wheat spaghetti with homemade meat & mushroom sauce, along with a salad, lightly dressed with balsamic vinaigrette.  I think it was the first time I have ever actually weighed the pasta before cooking it to get a serving!  If I did the math right, this is 11 pp for the meal.

Healthy start breakfast

Healthy start breakfast...egg beaters stuffed with zucchini, onions, spinach & low fat mozz cheese & topped with sauteed grape tomatoes; bruschetta veggie burger with tomatoes, watermelon & blueberries and a glass of Trop 50 oj. All of this, including the juice, is only 5 pp! (2 for veggie burger, 1 for cheese, 1 for egg beaters, 1 for juice)

Lemon garlic chicken

Chicken breast marinated in lemon juice, garlic & just a little bit of olive oil, roasted garlic & onion potatoes and roasted veggies.  All topped with a little feta cheese. 7 pp for the meal.
