PBJ wrap

Sometimes the basics are just what the taste buds are looking for! Peanut butter & jelly (fig) plus banana on whole wheat wrap. Washed it down with a glass of milk. My treat for today.

Omelet with veggie burger, spinach, olives, tomatoes & cheese. Served with grapefruit.

Chicken mushroom soup

Chicken, mushroom & wild rice soup. Started with a can of cream of mushroom & added pre-cooked chicken, spinach, fresh sauteed mushrooms and leftover rice from Sunday's dinner!

Veal Marsala

Veal Marsala over fresh linguine served with oven roasted garlic asparagus, drizzled with balsamic glaze. The Marsala sauce was from Campbell's Sauces & it was delicious!! I would definitely recommend them! Just cut the pouch and pour!

Noodle soup

Taking a cue from Sandra Lee and had some semi-homemade soup for lunch. Started with Chunky Chicken Noodle and added turmeric, extra chicken and fresh spinach.

South of the border dinner

Chicken enchilada casserole, arroz con gandules (rice & pigeon peas), homemade guacamole and blue corn tortilla chips. Ole'!

Lamb omelet

Used the rest of the leftover lamb at breakfast! Lamb & goat cheese omelet with red potato/pepper/zucchini/onion hash.

Gyro salad

I used some of the leftover lamb roast from last night and made a gyro salad: greens, red peppers, egg, cucumber, olives, lamb, goat cheese and tzatziki dressing.

Stuffed lamb

Spinach, sundried tomatoes and goat cheese stuffed in a boneless lamb roast for dinner. Served with caprese salad and orzo & wild rice sautéed with green onions, sundried tomatoes, mushrooms and fresh parsley.

Pasta primavera

Whole wheat pasta primavera. Adding lots of veggies really makes a little serving of pasta turn into a filling plate! I used onions, asparagus, mushrooms, tomatoes, spinach and parsley. Topped with just a few fresh parm shavings.
Steak & vegetable hash (leftover steak, zucchini, yellow squash, onion, peppers & mushrooms) topped with poached eggs. Along with an orange for a yummy breakfast.

Bacon cheeseburger omelet

Bacon cheeseburger omelet! Beef crumbles, bacon, onions, mushrooms, peppers, spinach, tomatoes & a little cheese. Served with a strawberry & almond milk smoothie with a shot of vanilla protein. 

Crock pot lamb shanks

Lamb shanks (fall off the bone tender from cooking in the crock pot!) over spaghetti squash with mixed veggies & a roll. It was quite yummy if I do say so myself!

Lunch today

Salmon burger with dill & caper cream, sauteed yellow squash/asparagus/green onion & lentils topped off with a little goat cheese.

Omelet Parmesan

Veggie omelet parmesan. Egg whites with spinach, onion, fennel, veggie mushroom burger, black olive, mozz and a little parm cheese & fresh basil.

Egg salad wrap & smoothie

Egg salad on whole wheat wrap (with spring mix, olives, celery, onions and tomato) and a green smoothie (pear, apple, spinach) 

Apple pie oatmeal

Apple pie oatmeal: diced apples & raisins softened in apple cinnamon tea and then cooked with oatmeal, along with some apple pie spice. Topped with greek vanilla yogurt and apple crunch topping (from Pampered Chef)

Breakfast this morning...egg white omelet with spinach, onions, sun dried tomatoes, black olives and goat cheese. Served with bacon and berries on the side

Steak dinner

Grilled sirloin that I rubbed with Chef Paul's steak seasoning (that I bought in New Orleans last week at his restaurant) & topped with sauteed mushrooms, bacon wrapped asparagus & homemade jalapeno corn bread.

Cashew chicken


Cashew chicken & broccoli faux mein! I used shirataki tofu noodles in this dish. Tossed the ingredients in a little chili & sesame oil as well as some low sodium soy sauce.
