Stuffed skirt steak & gnocchi

Well, I took several suggestions for basil and this is what I came up with. Gnocchi tossed with mushrooms, black olives, artichokes, diced tomatoes & pesto. Served with a stuffed pinwheel steak (cheated, store bought) cooked in fresh tomato sauce and served with asparagus. Everything was topped with fresh parm & basil chiffonade.

Chicken taco salad

Chicken taco salad: cooked a chicken breast in salsa then shredded it; lettuce, chicken, black beans, corn, cheddar cheese, black olives, tomatoes, red peppers, sour cream, homemade guacamole & cilantro. Ole'!

Quick homemade Pho

Made some quick Pho for lunch. Beef broth (heated with star anise then removed it), rice noodles, veggie meatballs, cilantro, basil, bean sprouts, lime & and shot of sriracha. Not bad for less than 10 minutes!

2 in one flatbread

I couldn't decide what type of flatbread to make for my lunch so I did two in one! The left side is spinach, tomato, mozz & fresh basil. The right side is fig jelly & figs, goat cheese, pepitas & balsamic glaze. I used some Greek yogurt cream cheese as a base on both sides.

Spinach - chicken pasta, two ways


By request! Spinach fettuccine with chicken, mushrooms, artichokes, spinach, onions, garlic and sundried tomatoes. The one on the left is tossed in homemade Alfredo, the one on the right is plain. Both tasted good!

Fruit & veggies galore this morning. Egg + egg white omelet with onions, peppers, spinach, shredded zucchini & a chopped up MorningStar Farms Veggie Burger along with some cherry tomatoes (from my patio garden!). Served with some berries & kiwi.

Fruit & Veggieriffic breakfast

It's a fruit & veggieriffic kind of breakfast! Baked portobello mushroom stuffed with scrambled eggs (with onion, peppers, spinach , tomato & greek seasoning) & topped with feta cheese. Served with sliced avocado and a green smoothie (spinach, kiwi, avocado, pear, apple, frozen banana). Funny how I crave produce after getting home from a biz trip!

Lots of color (and antioxidants!) at breakfast this morning! Fresh mixed fruit (that ended up in a to go container for the airport) and two eggs over easy on top of lots of veggies (assorted peppers, mushrooms, tomatoes and spinach) as well as some avocado.

Homemade baked eggrolls (Asian flavored burgers from MorningStar Farms along with some broccoli slaw, water chestnuts & some peanut satay sauce) and homemade egg drop soup. The dipping sauce is sugar free apricot jam, soy sauce & Chinese hot mustard.

Grilled chicken caprese pasta

Grilled chicken caprese pasta. Whole wheat linguine tossed with sauteed garlic, tomatoes, artichokes, onions, mozzarella and spinach and topped with balsamic glaze and fresh parm. I marinated the chicken in an artichoke pesto prior to grilling as well (from World Market)

Veggie burger + veggies omelet

Omelet with veggie burger, asparagus, tomatoes and low fat cheddar. Served with grapes and banana.

Denver omelet

Crab and Swiss omelet

So, I had some leftover crab from last' night when I made the crab rangoon crisps. Oh what to do with it (not enough for crab cakes). So I made a crab, swiss cheese & green onion omelet topped with avocado & tomato. Served with potato & zucchini home fries and plum/nectarine/grapes.

Seared tuna and shrimp


Seared tuna steak, rare of course (with black & white sesame seeds and teriyaki) and a few shrimp over some shirataki noodles that I added to stir fried cabbage & broccoli slaw. Served with stir fried zucchini/onions/peppers and crab rangoon crisps. I made the crisps by dividing an eggroll wrapper by 4, brushing with just a little olive oil and baked in muffin tins for about 10 min. Filling is simply crab, green onion & goat cream cheese. I was very happy with the results!
