Fish and mushy pea fritters

My God Daughter is on her way back from England today and she posted having fish, chips & mushy peas as her last meal. Her boyfriend commented that mushy pea fritters are a favorite of his. Since I had never heard of them, had to do a little "googling" and made some for my lunch. I used thawed green peas, feta, mint, green onion, a few bread crumbs and plain greek yogurt. They are topped with sour cream as that's what the recipes I saw said to do. Served with pan fried swai.

Baked drunken peach

Baked "drunken" peach: peach brushed with Jack Daniels Honey and topped with gingersnaps then baked for about 10 minutes. Finished with frozen vanilla yogurt, caramel sauce (spiked with more JD Honey) and some additional gingersnap crumbs.

Chicken and Mac & Cheese gone Mexican

Tim ordered chicken and some homemade mac & cheese ...I decided to put a Mexican twist on them! Chicken is seasoned with adobo & sazon and topped with a cilantro cream sauce. Mac & cheese has white cheddar and cheddar jack cheeses along with some jalapenos & topped with breadcrumbs. Served with a avocado & tomato salad and a margarita to wash it all down!

Lobster ravioli

Lobster ravioli with a 3 cheese (goat, cream & parm) & cognac sauce along with crab, shrimp & power greens (kale, spinach, chard). Served with oven roasted garlic-truffle asparagus. Gotta say, it was really good! It was a good day today...goat cheese made it into all of my meals!

Power greens salad (spinach, kale, chard) topped with beets, mandarin oranges, goat cheese, pepitas & balsamic glaze. Served with a wild rice (leftovers from last night) & lentil pilaf with carrots, onions & mushrooms.

Omelet a la Nicki

I'm calling this an Omelet a la Nicki in honor of my God-daughter. It's filled with some of her favorites: spinach, bacon, sun dried tomatoes and goat cheese. Served with blackberries and melon.

Pastrami Reuben

Had some leftover sauerkraut from last night so made pastrami ruebens for lunch today! Also made some homemade microwave sweet potato chips! 

Fluffy omelet

Fluffy omelet! Saw this from Food & Wine magazine. Basically beat the egg whites like you're making meringue then fold in the yolk (I only added back one). Fill with your favorite goodies. I added spinach, asparagus, mushrooms, onions, grape tomatoes & brie cheese this morning. Served with melon. Flipping & folding was the biggest challenge (it did deflate a bit)

German night at home

German was the theme for dinner tonight. Pork schnitzel with mushroom gravy, sauerkraut (with apple, caraway & brown sugar) and German potato salad (with my mom and grandma's addition of a chopped egg). It was yummy!

Breakfast Parfait

Breakfast parfait: banana, Greek blueberry yogurt, fresh blueberries and a crumbled 100 calorie blueberry bar instead of granola.

It may look like spaghetti & meatballs but it's a low calorie & healthier alternative! Zucchini strings (softened in a bit of chicken stock and tossed with a little pesto), topped with fresh tomatoes, a little pesto, onions, MorningStar Farms veggie "meatballs" and fresh parm.

Veggie scramble

Off the road for a few days so of course I'm starting with lots of fruit and veggies! Skilled scramble (1 egg + 2 egg whites), chopped MorningStar Farms veggie burger, baby bella mushrooms, spinach, tomatoes & feta cheese. Served with a banana and fresh squeezed oj. Happy Friday!
