Fluffy omelet

Fluffy omelet! Saw this from Food & Wine magazine. Basically beat the egg whites like you're making meringue then fold in the yolk (I only added back one). Fill with your favorite goodies. I added spinach, asparagus, mushrooms, onions, grape tomatoes & brie cheese this morning. Served with melon. Flipping & folding was the biggest challenge (it did deflate a bit)
