Mushroom ravioli
Mushroom & cheese ravioli (Monterrey brand, 8 pp per serving) topped with baby bella mushroom & spinach sauce (made from stock, 0 points!) & a grilled portobello mushroom. Total 9 pp for the dish (added 1 pp for the little bit of cheese and a light brushing of olive oil on the portobello). I also enjoyed a nice glass of cab with my meal for 4 pp
Apples & steel cut oatmeal
Steel cut oatmeal cooked in apple cinnamon tea, topped with cinnamon apples (also cooked in cinnamon apple tea & extra cinnamon) and a little skim milk. Served with melon. 5 pp total.

Surf & turf
Surf and turf for dinner tonight. All of this for 9 points plus! Filet (4 oz = 4 pp) with mushrooms & onions, 4 oz lobster tail (3 pp) cooked with a couple squirts of spray "butter," lemon zest and Penzey's fish seasoning; mashed cauliflower (1 pp for the light cream cheese I used) and a caprese salad (1 pp for the lowfat mozz).

This is an egg beaters omelet (I had stopped using them for a while but with ww, they are lower in points than real eggs for omelets) with a serving of frozen hash browns (1 pp) and shredded zucchini with tomato on top. The turkey ham is 3 oz of lean protein for 3 pp. A very filling breakfast for 5 pp. I've got some fruit on my desk to eat mid morning--too full after the omelet!

Mother's Day Breakfast
I'm starting my day off right with lots of fruits and veggies! The beverage is red grapes, pineapple, cantaloupe and a few ice cubes blended in my Vitamix. Along with the center cut bacon, I made a grilled portobello mushroom cap and topped it with eggs that were scrambled with onion, spinach, peppers & a little low-fat cheddar cheese.

Chicken cutlets and harvest grain & pasta medley (plus spinach)
Lunch is ready! Chicken breast (I split it in half to make 2 thin cutlets...makes it look like more food!) that I coated in ground Special K crackers and a 7 seed herb blend then cooked in a non stick pan with a teaspoon of avocado oil. Served with a pasta grain blend from World Market that I simmered in chicken broth and added spinach near the end of the cooking time.

Portobello mushroom ravioli with Marsala sauce
Semi homemade tonight. I used store bought mushroom ravioli and started the sauce with a mushroom gravy mix (I know, big cheater) but added fresh sauteed mushrooms and used marsala wine & beef broth instead of the water and also added some half & half to make it creamy.
Good food from a dude (my son)
So, my son came over today for lunch to show his "mad food skills." He cooked the fish (on the grill, with Boston Bay & Lemon Pepper), I made the sides -- roasted green beans and tomatoes & corn on the cob with chile lime rub & queso fresco. He opted for garlic bread in lieu of the beans. It's nice to see your kids grow up and eat things they never used to, like fish that isn't coated in batter and fried! One proud mama here! He said I could call it Good Food from a Dude. Love it!
Powered up porridge
Steel cut oatmeal "pumped up" with a scoop of vanilla whey protein and cooked with light almond milk. Topped with cinnamon raisin apples and toasted walnuts.
