Pasta Carbonara
One of Tim's favorites was requested tonight, Pasta Carbonara. While it's certainly not a low fat dish, I did use whole wheat pasta and extra egg white vs 2 eggs in the sauce. In addition I used center cut bacon and *GASP" drained the bacon fat before cooking the mushrooms and onions! Topped with parsley and green onions. Is it a bad thing to like your own cooking so much?? LOL!
Chicken Nachos
I channeled a local restaurant's loaded chicken nachos for our lunch today. Yep, it' not be a great weekend for healthy food but it's been good food! Back on track tomorrow! Anyway, this is blue corn tortilla chips topped with a shredded chicken breast (seasoned and cooked with some fresh salsa), low fat cheddar, jalapeno havarti, fat-free refried beans, low fat sour cream, fresh salsa, jalapenos & green onion.
Ham and veggie scramble
Ham & veggie scramble: one whole egg plus an extra white & I boosted protein by blending in about 1/4 cup low fat cottage cheese. Folded in ham, artichokes, green onion, tomatoes & fresh parsley. Served with a light English muffin topped with two different kinds of jam (blueberry limoncello & strawberry rhubarb).

Get Fit Cinnamon Roll oatmeal (it's really good,http://www.betteroats.com/ product/ oat-fit-cinnamon-roll/, first time trying it!) with peaches, apples & blueberries and sprinkled with extra cinnamon. Only 3 pp for a very filling breakfast bowl. Airport food for lunch...headed back to FL today.

Chinese make in!
Chinese Take Out? Nope! Chinese Make In! Chicken Lo Mein (whole wheat linguine, broccoli slaw, bean sprouts, onions, mushrooms, chicken breast) and baked homemade egg rolls (chopped Asian MorningStar Farms burger, sauteed broccoli slaw and some Asian Plum Dressing). Made some sweet n sour sauce with pineapple preserves, teriyaki & rice wine vinegar) and added a dollop of Chinese mustard. Estimate 8 pp for the lo mein & 4 pp for both egg rolls

BLT salad with blue cheese crumbles & dressing on the side. I used turkey bacon and a mix of lettuce (romaine, spinach, arugula). 8 pp with the dressing.
Grilled scallops, eggplant & asparagus
Tim made dinner tonight! He used the outdoor grill and did everything himself. I've created quite a good little sous chef! Scallops, asparagus sprinkled with truffle oil and sweet soy marinated eggplant topped with goat cheese. Estimate 8 pp with oils and sugar in marinade.
Muesli with apples & banana

Veggie and fruit plate
More veggies and fruit for lunch! Steamed broccoli, cauliflower & green beans. Simply topped with Smart Balance spray and S&P. Tried a MorningStar FarmsChick Pea Burger (not bad but would be better with some sauce, like tzatziki). Ending on a sweet note with a peach & nectarine. Only 3 pp for lunch today! I might have some frozen yogurt as treat this afternoon!

Fried green tomatoes
A bit of a splurge tonight but knew it was coming so watched the points earlier in the day. Fried green tomatoes (I ground the cornmeal myself with my Vitamix from dried corn I found at Williams Sonoma!) served on a bed of spinach & arugula and dressed with light buttermilk ranch. The side is homemade whole wheat jalapeno mac & cheese (fat free evap milk, light cream cheese & low fat cheddar). I calculated about 15 pp fore the meal but it was so good!

Beef & Mushroom Pie
While watching Diners, Drive-Ins & Dives the other night, one of the featured items was a beef & mushroom pie (http:// www.foodnetwork.com/ recipes/ steak-and-mushroom-pie-reci pe/index.html). Since we had leftover prime rib from our dinner on Sunday I thought it would be perfect to create my own rendition of it. Rather than a shell on top and bottom I used flattened refrigerator biscuits. Also used baby bella mushrooms vs button and also sauteed diced onions and a couple pieces of bacon. Gravy was made from beef stock & Wondra. Served with garlic broccoli & tomatoes.

Eggplant Parm
Meatless Monday was a success! And, eating lots of fruits and veggies as well today was also a success! Eggplant parm tower (non-breaded but brushed with olive oil and cooked a few minutes on each side before layering) with fresh tomato sauce, part skim ricotta & low-fat mozz cheese and Italian seasoning. Served over whole wheat pasta tossed with fresh spinach & basil. Gotta say, it was deelish!!
Creamy spinach-asparagus soup
Creamy spinach-asparagus soup, made in my Vitamix! I steamed a cup of fresh asparagus along with a shallot. Drained and added it to 1/2 cup skim milk & 1 cup chicken broth, 1 cup loosely packed fresh spinach, 1/2 cup of diced potato (I used canned but you could use fresh, cooked), 1/2 tsp salt & a couple grinds of garlic pepper. Blended for about a minute or two until smooth and warmed. Topped with a little bit of parm cheese, garlic pepper and a couple asparagus tips. Served with red grapes.
